Recipe #3 - Mango Coconut Smoothie

I thought I would try this recipe while mangoes are in season, and boy, am I glad that I did.  It's delicious!  I typically don't "drink my calories" but this baby was worth it.

If you have the cookbook, this recipe is on page 24 is called "Mango Coconut Smoothie".  If you don't, it is on their blog, but it is called "Virgin Mango Colada"  Same recipe, different names.

First off, let me just say that mangoes are hard to cut.  Sara and Kate even have a lovely tutorial (on page 25) that shows you how to cut a mango.  Ummm, it didn't matter.  I still struggled.  See exhibit A.


After totally slaughtering these mangoes, I had enough mango for the recipe.  (I cut two mangoes because I doubled the recipe.)

The next ingredient is Cream of Coconut.  This is not coconut extract or coconut milk.  It is Cream of Coconut.  I didn't know such a thing existed.  I had to do a little smart-phoning while at Target to even figure out were to find this baby.  It was in the drink mixer section, like by the bottles of Daiquiri mix.  Here is what mine looked like, but I read it is often found in a can.


Once I had everything but the ice in the blender, it looked like this:


This was with the recipe being doubled.  I image that I could have at least tripled it in my regular blender without a problem.

While I was at Target today, I noticed a 70% clearance section of "tropical" sorts of things, perfect for a backyard luau.  I REALLY wanted to buy a sweet-looking tropical drink glass, a set of cute straws, and some little paper umbrellas for this photo.


Clearly I didn't.  I heard this voice in my head saying, "Lori, do we REALLY need that?  Every dollar adds up."  Pretty sure my husband has had a little microchip planted in my brain and emits that same message every time I browse the clearance section at Target for things that I don't need.  However, when I sell the movie rights to my life story or this blog, whichever comes first, I will buy myself a set of cute tropical drink glasses.

Regardless of how boring it may look, it got rave reviews from the family.  Even my youngest and her best friend loved it.
