Recipe #52 - Pineapple-Ginger Flank Steak

With grilling season coming to a close, I thought I better start cranking out a few of these grilling recipes.  However, I have been known to ask my hubby to put on his winter coat and grill at any given time in the year.  One year he got smart and put the grill in the shed for the winter.  Stinker.

Today's recipe is Pineapple-Ginger Flank Steak on page 136.  Its not online, so its time to buy the cookbook. 

Start by whisking together the ingredients for the marinade.



Reserve 1/4 cup of the marinade to save for later.


Next you score the flank steak to tenderize the meat.


The steak goes into a large ziplock bag.


Pour in the marinade and refrigerate 8 hours to overnight.  (I did mine overnight.)


The steak needs to be out of the fridge for about 30 minutes before grilling.  Then grill it for 5-10 minutes on each side.


In the last few minutes of grilling, you brush on the reserved marinade.  Ah, juicy, glazed goodness on a plate!


Slice and serve!


This is great served plain with some Sweet and Savory Coconut Rice.  Or try it on a salad or in tacos.  Its sure to be a hit with your family.  It was with mine!
