Recipe #50 - Grilled Taco Chicken

This is the third recipe I made for dinner on my crazy day.  This is actually the reason that I planned things so poorly.  You see, this was going to be Monday's dinner.  My girls have gymnastics, and I knew that I could throw together tacos quickly.  About an hour before gymnastics, I went to make the guacamole and pico de gallo.

Luckily, I peeked at the chicken recipe first to see if there was anything I could prep for it.  Uhh...I was supposed to marinate the chicken for 4-8 hours.  Well, that wasn't happening before dinner.  I think we had Wendy's for dinner that night.  Mother of the Year!

As I stupidly determined that I could make all these things for dinner on Tuesday, I made sure that I got this marinading in advance.

First you need to trim the chicken and put it into a larger ziploc bag.


Then you add the ingredients for the marinade: red wine vinegar, lime juice, and garlic.  Then you seal the bag and give the marinade a good shake.


After it marinades for 4-8 hours, you fire up the grill and prep the ingredients for the rub.


Rub the spices on the chicken.


This is the point where you start wishing that your husband was home from work, because you only have 20 minutes to get dinner on the table, eat and get to the church to set-up for an activity.  But alas, he's not home and you're behind.

Oh wait.  That was just me.  For you, its time to get the chicken on the grill.


Once the chicken is cooked, it needs to stand for about 5 minutes.


Slice and serve!  Oh and it is delicious!

Although I was totally stressed out while making this, it was really simple.  It was nice that I could prep it early in the day and then just had to grill it up.  Just don't even think about making homemade tortillas on the same day.  Yeah...that disaster will be posted tomorrow.
