Recipe #49 - Guacamole

The next recipe I decided to make on my day of craziness was the Guacamole found on page 50 or online here.  This was another thing that I could make as my day allowed and just stick in the fridge.

Start with 2-3 delicious avocados.


 Mash them up in a bowl.

 
Then you add the rest of the ingredients and stir.

 
That's it, folks!  Guacamole is ready!

 
The very first time I made homemade guacamole, I had no idea that it would turn brown in the fridge.  I made it early in the day for a party that night.  When I took it out of the fridge, I about died.  It was a brown horrible mess.  Luckily, I realized that it still tasted good, so I scraped off the top layer and served it.  All was well.

After that I learned a few tricks to keeping the guacamole green.

Trick #1 - Use this recipe!  The sour cream has an enzyme in it that keeps the guacamole looking green for a long time.  This next picture was just taken.  This is NINE DAYS after I made the guacamole.  You can see that its still very green, and if you look super close there are a couple tiny spots where it is just beginning to brown.


Trick #2 - Avocado browns when it is exposed to air.  So even if you're putting your guacamole in an air tight container, there is air between the guacamole and the lid.  That air will help it to brown.  So try this.  Get a piece of Saran Wrap and press it into your guacamole like this:


 Between those two things, your guacamole will last longer than a day or two!  Enjoy!

  1. I've never made OBB version of Guac. I always make my grandma's recipe. I will have to give their recipe a try. See how inspiring you are! Also I do like the new look of the blog very cute. Third have you personally tried any recipes from the second cookbook. I know your focusing on the first book for the blog.

    Confession...I don't have the second book yet. :( I really, really want it, but my birthday is coming up in a week and I'm crossing my fingers that I get it. My husband gave me grief that I don't give him a chance to buy me the stuff that I really, really want since I just go buy it for myself. But if my birthday comes and goes without a book, I will be making a quick Costco run to pick it up!
